NATIVE · ANTIBIOTIC-FREE · TRACEABLE
In the heart of the Peruvian Amazon, we raise two of the world's rarest freshwater fish in their native habitat, no antibiotics, no hormones, no wild capture. From our ponds to the world's finest tables.
Who we are
Amazonian Reserve is the brand of Amazon Aquaculture S.A.C. We are a certified aquaculture producer deep in the Peruvian Amazon, near Pucallpa. Our team lives and works where the paiche has always lived, on ponds fed by its native waters and surrounded by standing rainforest.
We control every link in the chain. We hold our own broodstock and hatch our own fingerlings. We grow the fish in our ponds on feed we produce, then process it into fillets and portions for export and the Peruvian table. Every fish is raised without antibiotics or hormones, to international standards. Nothing is anonymous. Each fillet traces back to a pond, a harvest date, and the hands that raised it.
We farm native species precisely so the wild ones can stay wild. Wild paiche was fished so heavily that it is now protected across much of its range. By raising it at origin, in its own watershed, we take the pressure off the Amazon's stocks while keeping the flavor, the texture and the lineage exactly where they belong. Aquaculture, done at the source, is conservation you can put on a plate.

From the Amazon, for the table
“For centuries the paiche and the doncella have fed the great river cultures of Peru and Brazil. Today they are raised at origin and reserved for the kitchens that understand them.”

Born and raised in the Ucayali basin, in the same waters their wild ancestors swam. Tradition, culture and place in every fillet.

One farm, one source. Never destined for supermarket shelves, reserved for chefs, caterers and gourmet tables.
